Coconut Shrimp and Grape Salad

20 Aqua Star Coconut Shrimp, baked

16oz Spring Mix Lettuce

½ cup sliced green grapes

½ cup sliced red grapes

1 cup finely diced fresh pineapple

¾ cup extra virgin Olive oil

¼ cup white Balsamic Vinegar

Preparation Instructions:
 

1. Bake coconut shrimp according to package directions

2. In a small bowl, mix olive oil and vinegar together

3. Divide Spring Mix onto four plates and drizzle ½ cup of oil & vinegar mix over them.

4. Divide the grapes and pineapple between the four plates

5. Garnish with 5 Aqua Star Coconut Shrimp
