Our creamy Crab Linguine is the ultimate comfort food. Fragrant shallots, tangy sundried tomatoes and crispy bacon simmer in olive oil in a skillet, then are doused with white wine, heavy cream and freshly squeezed lemon juice. Toss in succulent chunks of crab meat and baby spinach for color and texture, then add linguine to soak in the juices. Serve warm with freshly grated Parmesan cheese for a delicious, satisfying meal.

Ingredients

  • 2 tsp olive oil
  • 1/4 cup chopped pancetta or bacon
  • 1/4 cup finely chopped shallots
  • 2 tbsp thinly sliced sundried tomatoes
  • 1/2 cup white wine
  • 1 lb linguine, cooked
  • 1 cup heavy cream
  • 1 cup baby spinach or baby arugula
  • 1 tsp fresh lemon juice
  • 6 oz Aqua Star Pasteurized Blue Swimming Crab Meat, drained
  • salt and pepper to taste
  • 1/4 cup Parmesan cheese, freshly grated

Instructions

In a large skillet over medium-high heat, sauté bacon or pancetta, shallots and sundried tomatoes in olive oil for 2-3 minutes. Add white wine, lemon juice and heavy cream. Simmer until sauce is reduced by half. Once sauce is reduced, add crab meat, spinach and linguine; cook for 1 minute or until the spinach starts to wilt. Season with salt and pepper. Place pasta in a serving bowl and sprinkle with freshly grated Parmesan cheese.

Serve with a simple green salad and pair with white wine.
