A fish twist to the classic Reuben. As weird as it may sound, our Crispy Battered Alaskan Cod is a perfect substitute for corned beef and an easy way to squeeze more seafood into your diet. Pile it on high and grill it in rye!

Ingredients

  • 4 fillets Aqua Star Crispy Battered Alaskan Cod
  • 4 slices rye bread
  • Butter
  • 8 slices Swiss cheese
  • 8 tbsp Thousand island dressing
  • 1 cup drained Sauerkraut

To make

Instructions

Bake cod according to package directions. Meanwhile, butter 1 side of each piece of rye bread. Place two of the rye bread slices butter side down on a plate. Top each non-buttered side with 2 slices of Swiss cheese, 2 tbsp thousand island dressing and ½ of the sauerkraut. When cod is done baking, place two fillets on top of each build. Top with remaining sauerkraut, thousand island dressing, Swiss cheese and rye bread, butter side out. Heat a large skillet over medium-high heat. Cook the sandwiches, pressing down with a spatula for 1-2 minutes per side until toasted and cheese is melted.

Serving Suggestions

Serve with a side of potato chips and a pickle.
