Ingredients

  • 1 package MicroSteam® a La Carte Lemon Caper Tilapia
  • ½ pound peeled and seeded butternut squash, cut in ½ - ¾ “ dices
  • ½ pound petite green beans, trimmed
  • Olive oil
  • Salt and pepper to taste

To make

Instructions

Preheat oven to 375°F. Place the squash in a medium bowl; drizzle with olive oil, season with salt and pepper and toss until well coated. Transfer to a foil lined baking sheet and bake for 30 minutes.
Add 1” lightly salted water to medium saucepan and bring to a boil on medium high heat. Place green beans into the saucepan with a steam basket (or can be added directly to water if you don’t have a steam basket). Cover and cook for 6-8 minutes or until beans are tender. When the squash and beans are almost done cooking, cook the Lemon Caper Tilapia, according to package directions.
Divide the squash and green beans in half and place on each of the plates. Add tilapia and sauce and enjoy!
