  • 1 Aqua Star Wild Alaskan Salmon Burger
  • 2 thick slices of artisan bread
  • 1 avocado
  • ½ cup thinly sliced fennel
  • ½ cup thinly sliced red radish
  • 1 Tbsp vegetable oil
  • Salt & black pepper to taste

Lemon Herb Vinaigrette:

  • 3 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 Tbsp white wine vinegar
  • 2 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1 Tbsp parsley, minced
  • 1 Tbsp basil, minced
  • 1 Tbsp shallot, minced
  • Salt & black pepper to taste

To make


To make the vinaigrette, add all ingredients in a mixing bowl and mix until smooth. Toss the fennel and radish with vinaigrette before preparing the burger and set aside. Prepare the salmon burger according to package directions. When the burger is almost finished cooking, toast your bread. After toasting the bread, cut the avocado in half, scooping out the inside of both halves. Using a fork or spoon, smash the avocado in a bowl, then spread a healthy layer on each slice of toast. Next, add the fennel and radish mixture on top. Finally, slice the salmon burger into 4 pieces, topping each piece of avocado toast with two pieces of burger.

Serving Suggestions

Pre-made vinaigrettes are a simple and easy alternative if you don’t have the time or ingredients to make your own. Also, vinaigrette can be made ahead of time and stored in the refrigerator for up to a week.
