Ingredients

  • 1 lb Aqua Star Crab Meat, thawed and drained
  • 1 green bell pepper, chopped fine
  • 1 red bell pepper, chopped fine
  • 1 large onion ,chopped fine
  • 4 eggs, beaten
  • 2-3 cups flour
  • 1 tsp salt
  • 1 tsp Cajun seasoning (you can increase to 2 tsp to make it spicier)
  • 6 dashes Tabasco sauce
  • 3 tsp baking powder
  • 1 oz cilantro, chopped (optional)
  • 1-quart vegetable oil (approximately, as needed to deep fry)

Instructions

Combine all ingredients. If batter is runny, add additional flour until batter is stiff enough to be dropped into the hot oil (may need to add an additional cup). Heat oil to 350 F. Drop 2 tbsp of batter into the hot oil and fry fritters until golden brown, about 5-7 minutes. Drain fritters on paper towels before serving.

Serving Suggestions

Serve alone as a snack, with your favorite dipping sauce, or top a salad.
