Chunks of crab meat sizzle alongside red and green peppers, onions and Cajun spices in a tasty, Tabasco-flavored batter. Fried, golden-brown and crispy on the outside, with a soft, chewy center, these crab fritters will melt in your mouth
1 tsp Cajun seasoning (you can increase to 2 tsp to make it spicier)
6 dashes Tabasco sauce
3 tsp baking powder
1 oz cilantro, chopped (optional)
1-quart vegetable oil (approximately, as needed to deep fry)

Combine all ingredients. If batter is runny, add additional flour until batter is stiff enough to be dropped into the hot oil (may need to add an additional cup).
Heat oil to 350 F. Drop 2 tbsp of batter into the hot oil and fry fritters until golden brown, about 5-7 minutes. Drain fritters on paper towels before serving.

Serve alone as a snack, with your favorite dipping sauce, or top a salad.
