  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 cup diced fully cooked andouille sausage
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tbsp Creole or Cajun-style seasoning
  • Aqua Star Seafood Medley 1lb
  • 2 cups minute rice or other instant rice
  • 1 1/4 cups water
  • 1 green onion, thinly sliced

To make


Heat oil in a 3-quart sauté pan over medium-high heat. Add onions and sausage and cook 4 minutes, stirring occasionally. Add garlic and red bell pepper, stir about 30 seconds. Add Creole seasoning, minute rice, seafood medley and stir to combine. Add water and stir until well mixed. Cover and bring to a boil. Turn down to medium heat and cook 10 minutes. Remove lid and season with salt and pepper. If all liquid is not absorbed, continue cooking and stirring until all liquid is gone. Garnish with sliced green onion and serve.

Serving Suggestions

Serve with blackened catfish and steamed broccoli.
