A cheerful treat for any occasion. Succulent shrimp added to a traditional Caprese salad, these colorful skewers of ripe cherry tomatoes, fragrant basil and fresh mozzarella are an easy, no-cook appetizer that looks every bit as good as it tastes.
1-12 oz bag Aqua Star 31/40 cooked, tail-off shrimp
30 cherry tomatoes
15 fresh baby mozzarella balls
15 fresh basil leaves, additional for garnish
15 medium size skewers
Balsamic vinegar
Extra virgin olive oil
Sea salt to taste

Instructions
Thaw and drain shrimp according to package directions.
To make a single skewer: place a cherry tomato in the middle of one shrimp and thread through the skewer. Wrap a basil leave around one mozzarella ball and skewer on top of the shrimp. Thread another shrimp with a cherry tomato and slide it on the skewer next to the mozzarella ball.
Repeat to make remaining skewers. Drizzle with olive oil and Balsamic vinegar and sprinkle with sea salt to taste.
