Crab Topping:

  • 1 cup mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1/3 cup grated parmesan cheese
  • ¼ cup fresh chopped dill
  • 2 cups Aqua Star Pasteurized Crab Meat, drained
  • 2 Tbsp diced and drained jarred red bell pepper
  • ¼ cup diced ham
  • Salt and ground black pepper to taste


  • 2 English cucumbers
  • Sliced ham for garnish
  • Fresh dill for garnish

To make


Place crab meat in a strainer and let drain completely.

In a medium size bowl mix together mayonnaise, lemon juice, Parmesan cheese and dill. Fold in crab meat, red bell pepper and ham (reserving some ham for garnish). Add salt and ground black pepper to taste.

Peel the cucumbers every other row to create vertical stripes and cut into 1/2” thick slices. Using a small spoon, scoop out a small amount of the inside of the cucumber from the center of each slice creating a little bowl. Place cucumbers on a paper towel lined tray to absorb some of the moisture.

Top each cucumber with a dollop of crab meat mixture and transfer to a serving tray. Garnish with diced ham and dill. Serve and enjoy!

Cucumbers can easily be swapped with crostini or crackers.
