Ingredients

  • 2 cups cooked quinoa (fermented)
  • 2 tsp koji powder
  • 2 cups cooked farro
  • 1 Tbsp olive oil
  • 1 lb. Red King Crab combo meat
  • 1 Fresno chili, seeded and sliced
  • ¼ cup mint leaves, torn
  • ¼ cup fresh basil leaves, torn
  • 1 Tbsp garlic, minced
  • 1 Tbsp shallot, minced
  • 1 Tbsp ginger, peeled and minced
  • 1 Tbsp capers, minced
  • ½ cup green onions, sliced

Instructions

To Make Fermented Grains:
To ferment the quinoa, mix the koji powder with 3 cups water and add 2 cups raw quinoa. Store the grains submerged in the water in a dark cool place for three days or until the quinoa starts to rise to the surface of the water. As the quinoa ferments, it will smell reminiscent of dill pickles. Once the quinoa is fermented, discard the water and rinse the quinoa under cold running water.

Cook the quinoa in 1 cup fresh water over high heat until grains swell. Drain the remaining liquid.

Cook the farro in 1 cup fresh water over high heat until grains swell. Drain the remaining liquid.

Once both grains are cooked, spread on a sheet pan and chill overnight uncovered in the refrigerator.

To Make Stir Fry:
Heat olive oil in a large pot until smoking.

Add the Red King Crab combo meat, the grains and all remaining ingredients, stir-fry over high heat.

Season with salt to taste and garnish with mint or basil. Serve and enjoy!
