Ingredients

Lemon Oregano Dressing: Whisk together all ingredients in small bowl and set aside.

  • 1/3 cup fresh squeezed lemon juice
  • 1/3 cup olive oil
  • 1 tsp dried oregano
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 cup lemon oregano dressing
  • salt and pepper to taste

Marinated Feta: In a small bowl toss feta cheese with lemon oregano dressing and set aside.

  • 1 cup diced feta cheese
  • 1 tbsp lemon oregano dressing

For the salad

  • 1 yellow bell pepper, cut into large dices
  • ¼ red onion, thinly sliced
  • 2 medium sized tomatoes, sliced into wedges
  • Marinated feta
  • ¼ cup Lemon Oregano dressing
  • Salt and pepper to taste
  • 4- 4oz portions Aqua Star Pacific Salmon portions, prepared according to package directions

To make

Instructions

Place spring mix into a large mixing bowl. Add yellow pepper, onion, tomatoes, feta and dressing and toss. Season with salt and pepper to taste. Divide among 4 dinner plates and top each with a portion of salmon.

Serving Suggestions

Serve with garlic bread.
